Sanitary And Industrial Conductivity Liquid Level Controls work by measuring the liquids
resistivity. Resistance is a property that quantifies how strongly a given material opposes the flow of
electric current. For example, hydrocarbons (crude oil, ethane, octant, etc.) have a resistivity around
20 megohms and are non-conductive. Milk, whey and eggs on the other end have a resistivity between
200-1000 ohms making them very conductive.
